Ingredients:
- 4 cups old fashioned oats
- 2 cups sliced almonds
- 1½ cups coconut flakes (sweetened or unsweetened)
- ¼ teaspoon sea salt
- ½ cup honey, warmed
- ½ cup vegetable oil or melted coconut oil
- 1 teaspoon vanilla extract
- 2 teaspoons almond extract
- 2 cups chopped dried figs

We’ve made so many batches of this honey almond granola recipe we basically have it down to a science. A few extra tools and it comes together in a snap:
- BIG mixing bowl.
- Silicone baking mats.
- Granola storage container.
Method:
Preheat the oven to 375°F with a rack in the center position. Line a rimmed baking sheet with parchment paper.
In a large bowl, stir together the oats, almonds, coconut flakes and salt until combined.
In a small bowl whisk together honey, oil, vanilla and almond extract. Pour the honey mixture into the oats and toss together until combined.
Pour the oats onto the prepared baking sheet and spread out evenly.
Bake until lightly golden, about 20 minutes, stirring the granola half way through to prevent uneven browning.
Remove the granola from the oven and let it cool. Stir in the figs. Store in an airtight container for up to 1 week.
